Ingredients
-
Dough:
- 150g butter, unsalted
- 250g sugar
- 4 large eggs
- 300g flour
- 2tsp baking powder
Streusel:
- 350g flour
- 250g sugar
- 4tsp vanilla extract
- 250g butter, unsalted
Tips
It is best the day after it was baked, giving the flavours a chance to seep through the whole cake.
Directions
For the dough:
Whip the butter until frothy. Add sugar and eggs. Mix flour and baking powder, sift, and add bit by bit. Grease a large cookie sheet (or line it with parchment paper). Distribute the dough evenly (should be about 0.5-1" high).
For the Streusel:
Sift flour into a bowl and add sugar and vanilla extract. Add small pieces of the butter and 'knead' them in until Streusel (balls form). The softer the butter, the smaller the Streusel usually. Distribute them evenly on the dough, covering the whole dough.
Bake at 200C/400F for 25 minutes or until golden brown.
Serving Size: Makes 24 3x3" pieces
