Ingredients

    FOR CAKE:
    1 pound of apples (after peeling, coring, and slicing)
    1/4 cup Canoleo
    1/2 cup sugar
    3/4 cup unsweetened applesauce
    2 tbsp unsweetened soymilk
    1 cup all purpose flour
    1/2 cup whole wheat flour
    2 1/2 tsp baking powder

    FOR TOPPING:
    1/4 cup packed brown sugar
    1/2 tsp ground cinnamon
    1/2 tsp ground ginger

Directions

1. Preheat oven to 350, and lightly grease a springform pan.

2. Cook apples in a bit of water in the microwave for about 1.5 minutes, until soft but not mushy.

3. Cream together butter and sugar, then add the applesauce and the soymilk. Then, add the flour and baking powder and stir just until combined.

4. Add batter to greased pan, then arrange apple slices on top of cake

5. Prepare topping by mixing brown sugar, cinnamon, and ginger. Sprinkle topping over apples and bake for 30 to 40 minutes. Let cool for 15 minutes before unmolding from pan.

    This is an incredibly morish cake. I used all-purpose flour only since I did not have any wholewheat to hand and cut into about 12 small slices. - 5/31/10

    I made this to share with friends - we loved it! I did use Splenda for Baking and Splenda Brown Sugar instead of regular sugars. I baked for the full 40 minutes; it was still wet when I pulled it out. After setting for a while, it firmed up. It tasted wonderful! - 10/17/10
