4 large boneless, skinless chicken breasts2 cups corn flakes, crushed1 egg2 tsp's ranch dressing mix (or 1 tsp. each; onion powder and garlic powder with a dash of salt and pepper)2 tbsp. olive oil spray
Heat oven to 375 degrees. Pat chicken dry with a paper towel to remove excess moisture. Cut breasts into strips or nuggets, and add to a large bowl. Add the beaten egg and coat chicken well. Season the corn flakes with the ranch mix. Dredge the chicken in the crushed corn flakes. Spray a cookie sheet with olive oil. Place the chicken on the cookie sheet and spray the top with a little oil as well. bake thirty to forty minutes or until the crust is dry and begins to darken. immediately remove from pan. If it sticks, Heat the pan back up in the oven for a few minutes and try again. If the pan cools, it will stick.
