Spinach, Garbanzo and Pasta Salad with Lemony Dressing

Ingredients
Gluten Free Rotini - 1 BoxSpinach, fresh, 4 cupsChickpeas (garbanzo beans), 2 cansJuice from 2 LemonsZest from 2 Lemons Olive oil, 2 tbspGarlic, 2 cloves, mincedGolden Raisins, 1.5 cupsRed Pepper Flakes, 1.5 tbspSaltPepper
Directions
Cook pasta in large pot. Rinse chickpeas and set aside.

In a small bowl, whisk lemon juice, lemon zest, olive oil, garlic, and red pepper flakes until blended. Add salt and pepper to taste.

Combine pasta and spinach, allowing spinach to wilt. Add in chickpeas, dressing and raisins, mixing through. Can be served immediately or chilled and served later.
