Easy Black Bean & Sweet Potato Veggie Burgers

Ingredients
Directions
1 onion, chopped2 Tbsp. extra virgin olive oil3 cloves garlic, chopped2 Tbsp diced jalapenos (from a jar)2 tsp cumin1 large sweet potato, shredded2 cans reduced sodium black beans, mashed1 egg, lightly beaten1 cup Panko bread crumbs8 100% whole wheat hamburger buns
Turn broiler to high.
Saute chopped onion in olive oil over medium heat until translucent.
Add chopped garlic, diced jalapenos, and cumin to the pan and saute for seconds longer.
Transfer onion mixture to large bowl and add in shredded sweet potato, mashed black beans, egg, & bread crumbs.
Mix all ingredients together and form 8 patties.
Place patties on lightly sprayed cookie sheet or broiler pan and broil for 10 minutes per side (less time if you do not like them well done).
Serve on 100% whole wheat hamburger buns.
