Palak Tofu

Ingredients
2 1/2 tablespoons ghee1/2 yellow onion, chopped1/2 tsp chopped garlic1 tbsp ginger paste2 tbsp garam masala1 tbsp turmeric1/2 tsp ground cloves4 lightly crushed cardamom pods2 bunches spinach, chopped somewhat finely1/2 tsp honey1/4 cup 1% milk2/3-1/2 package sprouted firm tofu
Directions
Heat the ghee in the pan and add garlic, onion, ginger and all the spices. Sauté for about 3 minutes, then add chopped spinach, honey and milk. Sauté for another 5-7 minutes, to let the liquid reduce a bit. Add tofu cubes and heat through.

Serving Size: Makes 4 small almost 1-cup servings.
