Skinny Mashed Potatoes

Ingredients
1½ pounds Baby Dutch Yellow Potatoes, Yukon gold or red potatoes.¾ cup reduced-sodium chicken broth2 cups onions, choppedSalt and pepper, to taste2 tablespoons Smart Balance Light, see healthy benefits
Directions
1. Scrub potatoes and cut into even sized chunks.

2. Add potatoes to a pot and cover with water. Bring to a boil, cover and simmer for about 15-20 minutes until tender.

3. In the meantime, place onions on a microwave safe plate and cook in the microwave for about 4 minutes, until soft.

4. Add cooked onions and chicken broth to a blender and blend until smooth.

5. Drain potatoes into a colander and place drained potatoes back in the pot. Add the Smart Balance, pureed onions and broth and a little salt and pepper. Turn flame to medium and smash using a potato masher or the back of a fork. Mash potatoes until smooth and all the ingredients are heated.
