Potato Cauliflower Curry

6 cup potato, 1/4" dice (6 small potatoes)3 cup cauliflower, 1/4" dice (1 med head, florets only)1 cup red bell pepper, 1/4" dice (1 large pepper)1 cup orange bell pepper, 1/4" dice (1 large pepper)1 cup yellow onion, 1/4" dice1 cup red onion, 1/4" dice2 plum tomatoes, 1/4" dice3 Tbl fresh lemon juice (1 med lemon)2 Tbl garlic powder2 Tbl curry powder2 tsp ground ginger2 tsp crushed red pepper flakes
In a large skillet, heat olive oil to 350 degrees.
Add potatoes and cook 5 minutes.
Add cauliflower, stir to mix.
Add seasonings, cook 5 minutes.
Add pepper, tomatoes, onion and lemon juice. Stir. Adjust seasonings.
Cover and continue cooking 10 minutes or until potatoes are tender.
Serving Size: makes six 2-cup servings
