Ingredients
potatoes - 4 small/medium potatoes.5 medium onion 3 cloves of garlicpepper - 1/3 of a pepper1 tomato - ripe2 small eggplants1tbsp safflower oilwatersalt, pepper, cayenne pepper and paprika to season
Directions
saute onion, add potatoes, when they are almost done add eggplant, peppers and after few minutes tomato. Add garlic (minced). Add salt, pepper early, and the rest of the spices at the end. After adding paprika - cover and let it sit on very low heat for few more minutes.

Add water as needed while cooking to prevent burning but don't over do it - water should be mostly evaporated by the end.
