-5 eggs-water-1/4 c non-fat greek yogurt-2 medium sized squash-2 medium zucchini-1/2 yellow onion-1-2 stalks broccoli-1-3 bell peppers, any and all color-salt and pepper to taste-cheese to top or mix in, optional
Lightly saute all vegetables with garlic and oil.
Meanwhile whisk eggs, yogurt, water and cheese.
Mix everything together. Bake at 400 until eggs are set and golden on top.
Serving Size: Makes 5-6 4" squares
