Ingredients
1.5 eggplant, roasted under broiler for 60 minutes6 TBS of tahinizest of lemonjuice of half a lemonchopped mint1 TBSP olive oil
Directions
roast the eggplant until the skin is charred
let it cool, scoop flesh out and place in a colander to drain for 1 hour
mix with other ingredients and let marinate at room temperature for one more hour
top with chopped mint and pomegranate seeds if you like them

Serving Size: makes about 1 cup or 16 TBSP
