Spinach Stuffed Chicken Breasts

Ingredients
2 Tbls. Olive Oil1/2 onion chopped1 Tbls. Minced Garlic4 slices provolone1 1/2 cups Tomato Puree (can sub-statute nsa paste)1/2 cup shredded parmesan1/4 tsp. salt1/4 tsp. black pepper12 oz. chicken breast (about 3oz. each)1/2 cup Frozen spinach thawed and squeezed of all excess watertoothpicks or kitchen twine
Directions
1. Add 1 Tbls. oil to small sauce pan; add onion and garlic and sauté until fragrant. Add tomato puree, salt and pepper on med high heat for one minute; Add parmesan cheese reserving small amount for garnish. Simmer on low until melted and smooth.

2. Cut chicken breasts into 4 individual pieces (about 3 oz each) pound to 1/4 inch thickness between two pieces of plastic wrap. Place one slice of provolone over one chicken breast piece, add 1/4 of spinach; roll pinwheel style and secure with a toothpick (or kitchen twine) repeat for remaining chicken breasts.

3.Grease baking dish with remaining oil; Add chicken breasts and cover with tomato sauce; Cover with foil and bake at 350 degrees for 25 minutes; uncover and bake for additional 25 minutes.

Sprinkle reserved cheese and serve!
