Cream of Zucchini Soup

Ingredients
1 small onion chopped2 cloves of garlic3 or 4 medium zucchini, skin on cut in large chunks4 cups of chicken broth2 Tbs of fat free sour creamsalt & pepper to tastefresh grated parmesan chess if desired for topping
Directions
Combine chicken broth, onion, garlic and zucchini in a large pot over medium heat and bring to a boil. Lower heat, cover and simmer until tender, approx 20 minutes. Remove from heat and puree` in blender, add sour cream and puree` again until smooth.
