Modified slow food Kale Cauliflower salad

Ingredients
Ingredients:Kale, 3 cup, chopped Cauliflower, raw, 2.5 cup Cilantro, raw, 6 tbsp *Beefsteak Tomato (1 medium tomato), 2 serving Lemon, fresh squeezed, juice of one whole lemon, 2 serving *Clove of Garlic, 2 serving *Extra Virgin Olive Oil, 2 tbsp
Directions
separate kale leaves (~9 leaves) from stems. Discard stems. Set kale in large serving bowl. Shred Cauliflower (~1 full head) with large holes in grater. Dice garlic, tomato, and cilantro. Add cauliflower, tomato, cilantro, and garlic to kale in large bowl. Juice lemon and mix with olive oil for dressing. Add dressing to salad mixture in large bowl and toss. Massage dressing into kale with hands to improve kale texture. Salad flavors will mix better and texture will improve if salad is allowed to set overnight, but salad can be served immediately if preferred.
