Gluten- and Dairy-Free Banana Bread

Ingredients
Gluten- and Dairy-Free Banana Bread4 medium bananas4 eggs¼ cup palm oil, melted½ cup almond butter½ cup coconut flour1 teaspoon baking soda1 teaspoon baking powder1 teaspoon vanilla extractdash of cinnamon to tastedash of nutmeg to tastepinch of salt
Directions
Preheat the oven to 350°F. Grease a 9-by-5-inch metal loaf pan and line with foil or parchment paper.

Combine the bananas, eggs, palm oil, and almond butter in a mixing bowl and mix well until the ingredients are blended. Lumps may be visible. Add the coconut flour, baking soda, baking powder, vanilla, cinnamon, nutmeg and salt and mix together.

Pour the bread batter into the prepared pan and spread it out evenly.

Bake for 45 minutes or until a toothpick comes out clean when inserted in the middle. Remove from oven and let cool in the pan for 15 minutes before serving.

Serving Size: Makes a 9x5 loaf, approx 10-12 slices
