Fat Free Oat Bran Muffins

Ingredients
1 cup of eggbeaters1 C applesauce5 tsp baking soda dissolved in 2 C boiling water1 qt low fat buttermilk2 C bran flakes4 C high fiber all-bran1 C unprocessed bran5 C flour1/2 cup sugar1 C Splenda brown sugar blendmay add raisins dates or nuts, up to 2 C each
Directions
Dissolve baking soda in the boiling water. Mix all ingredients together (mix well) and put into a large conainer with well sealing lid. Refriderate for 24 hours before baking. Bake at 250 degrees in large or Reg muffin tins for about 30 minutes or until toothpick comes out clean
