Tomato-Cream Sauce

3 cups canned diced tomatoes1 T olive oil1/2 cup chopped onion1 clove garlic, minced2 tsp. parsley2 tsp. basil1/4 tsp. iodized sea saltdash black pepper3/4 cup heavy cream
Drain tomatoes, reserving liquid. In a blender, process 2 cups of tomatoes and all of the reserved liquid. Set aside.
In a medium saucepan, heat the olive oil over medium high heat. Saute the onion and garlic until softened, 1 to 2 minutes.
Add pureed tomatoes, diced tomatoes, parsley, basil, salt, and pepper. Stir to combine. Reduce heat to low and simmer until slightly thickened, approximately 25 to 30 minutes.
Gradually stir in cream, and cook over low heat until thorough heated through and flavors blend. Do not boil.
Serving Size: approximately 1 cup
