1 box of Ancient Harvest quinoa pasta1 large can of tomato sauce1 large can of diced tomatoes including liquid2 tbsp. extra virgin olive oil1 tsp. minced garlic1 Vidalia onion cut into large pieces4 large green peppers, each cut into 8 pieces1 package Jennie-O turkey Italian sausage (4 links)Grated parmesan cheese
Cook pasta according to box directions and set aside. With kitchen shears, cut each sausage link into 4 equal pieces. In a large saucepan, cook sausage & garlic until sausage is slightly browned. Add onions and sauté for 5 minutes until onions are clear. Add peppers, diced tomatoes & tomato sauce. Bring to a boil, turn to low heat and simmer for an hour. Serve over pasta and sprinkle with grated cheese.
