approx 1 cup panko chiplotle, or bread crumbs2 eggs, beatenflour, white approx 0.5cupeggplant, cut into slices approx 1/4inch.Dip eggplant slice first into flour to coatdip eggplant slice second into egg to coatdip eggplant slice third into bead crumbs to coatset into baking pan - lined with foil or sprayed.continue until all slices are coatedbake approx 425 for 30min or until done (taste test!).can now eat, or freeze.
