Chicken, Kale & White Bean Soup

3/4 lb ground chicken4 cups chopped kale1 medium onion3 tbsp minced garlic4 cups chicken broth1 cup white beans2 tbsp chopped fresh rosemaryjuice of half a lemon
In a blender, combine onion and 2 cups of chicken broth and puree until smooth. Set aside.
Saute ground chicken breast in large soup pot until mostly cooked through. Add garlic and rosemary to the soup pot and saute for 1 minute or until fragrant. Remove from the pot. Add chopped kale and cook for 3-5 minutes or until the leaves turn bright green. Add chicken back to the pan along with the onion puree, beans, and the remaining 2 cups of stock. Let simmer for at least 30 minutes.
Before serving, adjust seasoning and add lemon juice if desired.
Serving Size: Makes 4 healthy portions
