Ingredients
2 tsp olive oil2 tsp butter12 oz broccoli crowns2 small potatoes (Idaho or Yukon Gold), cubed1 small onion, chopped5 cups chicken or vegetable stock (store-bought or homemade)Small piece of parmesan cheese rind1/4 tsp urfa pepper or mild red pepper flakes, or more to taste1/2 tsp kosher salt1/4 tsp fresh black pepperParmesan cheese to top
Directions
chop all vegetables, saute until onions translucent, add broth cook for 10-15 minutes more. puree with immersion blender or food processor. top with grated cheese
