One Bowl Pineapple Mango Coconut Muffins

Ingredients
1.5 C Whole Wheat Flour2 Tbsp Cinnamon1 tsp Baking Soda1 tsp Baking Powder0.5 tsp Salt2 Eggs1.5 Tbsp Molasses1/2 C Maple Syrup1/4 C Unsweetened Applesauce1 C Mango, diced1 C Fresh Pineapple, diced3/4 C Pecans, chopped3/4 C Coconut, unsweetened0.5 to 1 C Rolled Oats
Directions
Stir Flour, Cinnamon, Baking Soda and Powder and Salt together in large bowl.

Make well in center.

Add Eggs, Molasses, Maple Syrup, Applesauce, Mango, Pineapple, Pecans and Coconut.

Mix everything together.

Add Oats to thicken.
(I usually add about 3/4 of a Cup).

Spoon into greased (Pam) Mini Muffin tin.

Bake @ 350 for about 20 minutes or until wooden skewer comes out clean.
