Chicken Thighs, simply baked

1 bone-in or boneless skinless chicken thigh (I like bone-in) Free Range and/or Organic if you can manage - you'll truly taste the difference!dash of saltfreshly ground pepper to taste dash of onion powderdash of THYME (Spark didn't have a 'dash' of thyme)NOTE (recipe is only calculated for 1 thigh, so adjust seasoning for more if you're making more)
Preheat over to 400, adjust rack to middle of oven
Rinse chicken thighs and pat dry (I do 4 at a time)
Put chicken into a baking pan, meaty side up (bone on bottom)
Sprinkle with spices
Bake in oven for 15 min.
Flip and re-season with a bit more of the thyme and onion powder (no need for more salt or pepper).
Bake for about 3 minutes more.
Let rest for 2-3 minutes
Enjoy!
