Momritz Bean & Rice with Tomatoes

Ingredients
1 C uncooked brown basmati rice 1 1/2 C chicken broth 1Tbsp butter (i used land o'lakes light spreadable)1 15oz can black beans, drained and rinsed 1 15oz can diced tomatoes, drained 1 Tbsp Cumin 1/2 Tbsp Paprika 1 tsp coriander
Directions
bring rice, broth and butter to boil
add black beans and tomatoes
reduce heat and cover - cook 20 minutes
remove from heat but leave covered
allow to rest 10-15 minutes
This makes about 4 to 4.5 good sized servings
