Creamy Corn Grits & Sausage Patties

1 tablespoon olive oil2 ears fresh yellow corn1 cup uncooked quick-cooking grits½ (8-oz) block ⅓-less-fat cream cheese,softened2 tablespoons chopped fresh cilantro (optional)½ teaspoon salt, ½ teaspoon pepper1 (9.6-oz) package fully-cooked turkey sausage patties
Heat oil in a medium nonstick skillet over
medium-high heat. Cut kernels off of corn cobs.
Cook corn kernels in hot oil 2 minutes or until
lightly golden; remove from heat. Cook grits
according to package directions. Stir in corn,
cream cheese, cilantro (if using), salt and
pepper. Prepare sausage patties according to
package directions. Serve grits with sausage
patties.
