Sausage breakfast quiche

Ingredients
2 green peppers1/2 medium onion5oz baby spinach8 oz mushrooms5 oz scallions9.6 oz pork sausage 1 dozen jumbo eggs1 cup 1% milk2 cups cheeseTbsp herbs provenceSaltPepper
Directions
Sauté vegetables till tender, season to taste. Break eggs and whisk in milk. Add sautéed vegetables to egg mix, stir thoroughly and add 2 cups of cheese. Heat oven to 350. Spray cupcake pan with non-stick spray. Fill cupcake pan 1/2 full with egg mixture. Bake 20-25 minutes checking to make sure tops of quiches have set.

Serving Size: Makes 40 quiches using standard cupcake pan
