Ingredients
1 Vidalia Onion1 Medium - large red ripe tomato1 cup of fresh sliced mushrooms4 tbsp extra virgin olive oilSeason to taste:I like to use garlic powder, onion powder, seasoned salt, pepper, oregan, and basil.
Directions
Heat olive oil in skillet add diced onions, mushrooms, and tomatoes, cook over medium heat until onions are translucent. Add spinach and simmer stir until spinach is soft, sprinkle cheese on top and turn off heat and cover to melt the cheese. Serve it up. It's yummy!
