Ingredients
5 eggs4 oz sharp cheddar cheese, shredded1 Tbs water1 Tbs fresh ground black pepper
Directions
preheat a non-stick small heavy skillet to medium high.
Wisk together the eggs and water, beating well.
Pour eggs into pan and cook undisturbed until bottom is set, about 5 minutes.
Flip over and continue cooking until bottom is set.
Sprinkle cheese over the center of the eggs.
Fold over and sprinkle with the pepper.
Cut in two and serve.
