3 (40z) petite sirloin steaks6 T. Extra Virgin Olive Oil1/2 white onion, sliced2 carrots, sliced1 red bell pepper, cut in 1/2 inch pieces1 yellow squash, sliced 1/8 in. thick1 cup broccoli, chopped10 sugar snap peas4 c. brown rice, cooked1/2 c. green onion3 cloves garlic, crushed1/3 c. soy saucesalt and pepper to taste
Cut steak into 1/4 in. slivers. Add meat to hot oil in skillet. Cook 3 minutes, stirring, and then remove. Add 2 T. oil to hot skillet. Add veggies: carrots,white onion, red bell pepper, broccoli, snap peas (withhold squash and green onions). Cook veggies 3 minutes on high heat, then add in the squash and cook for 2 more minutes. Remove. Add 2 T. olive oil to skillet and cooked rice. Heat for about 2 minutes, then add meat and veggies back into the pan along with crushed garlic and soy sauce. Heat through for 2 minutes and serve.
