Homemade Red Beans and Rice

Ingredients

3 cups of chicken broth1.5 cups uncooked brown rice1 bag of dry red beans2 cups frozen peas1/2 yellow bell pepper
1. Soak the beans overnight and all day.
2. Bring a big pot of water to a boil and drop in rinsed beans, then reduce to simmer and let simmer while everything else cooks.
3. In a separate pan, bring chicken broth to a boil. Add rice and peas and cook according to package directions. (You're substituting the broth for the water.)
4.When the rice and beans are both done, drain the beans. Add all the ingredients together, including the bell pepper, which adds a nice pop of color and a crunch.
5. Season with your preferred spices. I like garlic powder, onion powder and salt.
Serving Size: makes 12 1 cup servings (aprox)
