Stuffed Zucchini

Ingredients
Overgrown (large) ZucchinisGround Pork 20% fat or lessMushroomsTomatoesOnionsCeleryColby Jack Shredded Cheesebrown Rice
Directions
brown pork add any seasoning you like. I used garlic, monterey steak (low salt), oregano, Mrs. Dash, pepper, and parsley.

Puree the fresh tomatoes (don't bother peeling or seeding them.

Chop the vegetables and add to the meat.

Cut the Zucchinis either along the long axis in half or in thick 2-3 inch slices.

Remove the seeds.

Place in baking dish with light coating of olive oil

Fill boats or rings with meat mixture and top with cheese.

Bake at 350 for 25 min.
