Mocha Muffins

Ingredients
1 1/2 cups whole wheat pastry flour1/3 cup unsweetened cocoa powder1 teaspoon baking soda1/2 teaspoon salt1 1/4 cups sugar1 teaspoon instant espresso powder1 cup freshly brewed coffee1 teaspoon vanilla extract1 teaspoon white vinegar3/4 cup vegan chocolate chips 1/2 cup walnuts, chopped
Directions
Preheat oven to 350.

Combine dry and wet ingredients separately, combine, then add chocolate chips and walnuts.

Spoon into muffin pan (use cupcake liners), 3/4 full.

Bake for 18-20 minutes.
