Cauliflower Latkes (low carb)

Ingredients
1 cup cooked cauliflower (I used some that I had leftover)2 large eggs1/2 cup shredded mozzarellaa sprinkle of chopped green onion to taste
Directions
heat a skillet with about 1/4 inch of canola oil. Put all ingredients into the food processor and process until the mixture resembles shredded potatoes. Drop mixture in mounds into hot oil using a large serving spoon (about 1/4 cup mixture per mound). Serve warm with sour cream.
