Eggplant Caviar spread

2 large eggplants, cut in half lenthwise6 whole cloves of garlic, peeled1/4 c tahinijuice of 2 lemons1/8 tsp cayenne pepper1 tsp kosher or sea salt2 Tbsp Olive Oil1/2 Tbsp dried cilantro1/2 c chopped tomatoes ( fresh)
Place eggplant , cut side down and garlic on top of foil or parchment lined baking sheet. Bake at 375 degrees for 40 mins. until eggplant is soft. Cool until ready to handle. In food processor, place all ingredients into bowl and pulse until finely chopped but, not pureed. Taste for seasoning.
