Low Carb Key Lime Cream Cheese Dessert

1 packet unflavored gelatine1/2 cup key lime juice24 oz. cream cheese, softened2 1/2 cups powdered Swerve1 tsp. vanilla extract1 cup heavy cream, whipped
In a small saucepan, sprinkle gelatine over lime juice. Allow to soften for 5 minutes. Heat and stir over low heat to dissolve the gelatine completely.
In the bowl of a heavy duty mixer, combine cream cheese, Swerve, and vanilla extract. Beat until fluffy.
Gradually add gelatine mixture and beat again until fluffy.
Fold in half of whipped cream until well blended. Gently fold in the remaining half.
Spoon into 8 individual serving dishes. Refrigerate at least 6 hours. Chilling overnight is best.
Serve with whipped cream, if desired.
