LOW CARB Creamy 4 Pepper Chicken Soup

Ingredients
1 lb boneless chicken breast or thighs, chopped3/4 cup sour cream1/2 cup Heavy whipping cream2 T butter14-15 oz can petite diced tomatoes4 oz can chopped green chilies2 chopped jalapenos1 small chopped red bell pepperI small chopped red onion1/2 tsp cayenne1 tsp cumin1/4 tsp red pepper flakes1/2 tsp garlic powder1/2 tsp paprika1/2 tsp dried oregano1/4 tsp black pepper1 1/2 tsp saltChopped cilantro to garnish if desired
Directions
Saute butter, onions, halapeno and re bell pepper for about 3 min over high heat.
Add in chicken broth, tomatoes in juice and green chilies. Stir lightly, then add in sour cream and heavy cream. Reduce heat to low-medium.
Whisk the mixture until sour cream is completely melted and smooth throughout.
Add in the cayenne, cumin, red pepper flakes, garlic powder, chili powder, paprika, oregano, black pepper and salt. Stir well and let the mixture simmer.
Once simmering, add in the shredded chicken, Stir well. Allow mixture to simmer on low hear for 20-30 minutes until slightly thickened. Add a little water if too thick.

Serving Size: 1/6 of recipe is a serving...maybe about 1 1/4 cups
