Very Veggie Soup

Ingredients
1 medium zucchini, diced2 large celery stalks, diced1 cup of multicolored bell peppers, diced1 cup cherry tomatoes, sliced in half 4 cups chicken or beef broth (or 4 cups water and 1 Tbs. broth base)1 cup shredded carrots3 Tbs. cooked, drained ground beef 1 tsp. turmeric
Directions
Dice one zucchini, 2 large celery stalks, and 1 cup of multicolored bell peppers. Slice cherry tomatoes in half and stir fry all veggies in a nonstick skillet until tender. While they are cooking, heat 4 cups chicken or beef broth in the microwave and add 1 cup shredded carrots. Add 3 Tbs. cooked, drained ground beef to the veggies along with 1 tsp. turmeric. Add the cooked veggies to the broth and simmer for about 5 minutes in the microwave. Enjoy!
