3 meduim potatoes, boiled with skin1 or 2 large boiled eggs2 tbsp of sweet relish, sugar free1 onion, chopped2 stalks celery, diced2 tsp mustard2tbsp of miracle whip lite, ( or reg) adjust calories though.
Take place washed potatoes in pan with water boil until potatoes are soft. drain, meanwhile. boil eggs. chop onion,celery and mix in the other ingrediants. while potatoes are still warm peel and place in bowl. peel eggs and place in bowl i cut them both up in bowl then i add in the mixture and mix well, Place i refrigerator, good as is, especially when it's cold. This is my mom's recipe. It can serve 4 - 6 1/2 cups.
