Cornbread Stuffing Cups

Ingredients
*Stovetop Stuffing 1 box*Canola Oil, .25 cup Chicken Breast (cooked) 6 ounces Broccoli, cooked, 1 cup, chopped *1 cup onion chopped, .5 serving *Pepper, Bell, Green Seeded and Chopped, .5 cup *Colby and Monterey Jack Cheese shredded, 1 cup Egg, fresh, whole, raw, 2 large
Directions
Make stuffing using oil instead of butter. Mix all ingredients except cheese. Scoop mixture into muffin tin making 12 stuffing muffins. Top with cheese and bake at 350° for 20 or until heated through.
