2 cans (3c) black beans1 c (1/2c uncooked) quinoa3 green chiles (roasted and peeled and diced)6 cloves garlic, crushed1c fresh corn1 pepper red or green (diced)1 large tomato (diced)1 large yellow onion (diced)1 med zucchini (diced)1/4-1/2 c chopped cilantro (1/2 bunch?)1 - 1/2 c shredded Mexican blend (or pepperjack) cheese1 1/2 tbs cumin2 tsp chili powdersome cayenne1 tsp paprika (use hot smoked next time)2 tsp salt1 adobo packetmaybe add 1 jalepeno next time

sauté onions then add peppers then add zucchini then add corn and tomatoes and beans and quinoa and cilantro and spices
