Low Fat Baby Banana Muffins

Ingredients
2 cup flour1 tsp soda1 tsp cinnamon1/4 tsp nutmeg1/8 tsp salt1 cup brown sugar1 cup (or 2 large) mashed bananas3/4 cup applesauce1 large egg1 tbsp oil1 tsp vanilla
Directions
1. Lightly mix the dry ingredients.
2. Mix the sugar and wet ingredients with a mixer until they are frothy (1-2 minutes)
3. Make a well in the middle of the dry ingredients and stir in the wet ingredients until just mixed.
4. Bake in lined mini muffin tins at 350 degrees for 25-30 minutes.
5. Makes about 48 muffins, with 4-5 tsp batter in each muffin cup.

    I made a half batch of these, and put them in regular muffin cups instead of mini cups, and they were done in less than 20 minutes, so I would suggest watching them so they don't get over-done.

    These worked very good! I messed up on the directions a little, but they still turned out. Only made about 36 though. Kids and Hubby loved them! They put peanut butter on as a frosting! - 8/21/07
