Easy Zucchini Bread - Clean Eating - Coconut Flour

Ingredients
1 medium zucchini, shredded6 pastured eggs1/2 cup extra virgin coconut oil1/4 c stevia blend1 tsp vanilla extract1 tbsp ground cinnamon1/2 tbsp pumpkin pie spice1/2 tsp unrefined salt1 tsp baking soda1/2 cup organic coconut flour, sifted1/3 cup sprouted pecans or walnuts, chopped (optional)*Note: for this recipe it is best to use ingredients at room temperature so that the oils do not solidify during mixing.Preheat oven to 350° F. Shred zucchini coarsely with a cheese grater
Directions
Shred zucchini
Place all ingredients in blender
Pour into loaf pan that is lined with parchment paper
Bake at 350° for 50 minutes
