Brown Rice & Quinoa

Ingredients
1 1/2 CUPS CHOPPED ONIONS2 CUPS BEEF BOUILLON32 (112 g) BLACK KALAMATA OLIVES1 CUP CHICK PEAS3/4 CUP RAW (1 1/2 CUPS COOKED) BROWN RICE2 CUPS CHOPPED TOMATOES1 1/2 CUPS COOKED (3/4 CUP DRY) QUINOA
Directions
Combine all ingredients, except tomatoes and Quinoa and bring to a boil. Lower heat and simmer for 35 minutes. Add Quinoa and cook for 10 more minutes. Add tomato and cook 5 more minutes.

Remove from heat and let stand 5 minutes. Fluff with fork. Enjoy!
