Cilantro Lime Mango Quinoa Salad

Ingredients
Salad:2 cups uncooked quinoa2 celery stalks, chopped2 green onions, chopped1 mango, chopped1/4 cup slivered almonds1/4 cup dried cranberries1 mango, peeled and chopped1/2 cup fresh chopped cilantroDressing:1/4 olilve oilJuice of two limes (approx 3/4 cup)1 TBSP dijon mustardFresh garlicsalt and pepper to taste
Directions
Cook quinoa according to package directions and let cool. Once quinoa is cool, place in a large bowl and add salad ingredients and mix well.

Mix dressing ingredients together and shake well. Add to salad ingredients and mix well. Refrigerate for a couple of hours to allow flavours to blend.
