Veggie quiche - quick and easy

1 9" ready to bake frozen pie crust (organic, if possible)5 large eggs (organic, pasture raised are best)1 cup heavy cream or half & half2 tsp of oil to saute veggies in2.5 cups chopped vegetables of your choice (I have calculated the recipe with 1/2 cup of each onion, mushroom, spinach, zucchini and broccoli)4 oz of cheese in small cubes (I used Beecher's flagship)Salt, pepper, garlic, etc... to taste
- Chop the vegetables finely and saute them in oil until they are soft. Add salt, pepper, garlic and other spices to taste.
- Mix eggs and cream in a blender until smooth
- Pour egg mixture into frozen crust
- Add sauteed vegetables into the mixture
- Drop cubed cheese in and gently stir to spread the fillings around in the egg mixture
- Put in 400 degree oven for about 40 minutes... or until the center doesn't giggle when gently shaken.
- Cool on a wire rack for about 10 minutes before serving, so the egg doesn't separate.
Enjoy!
Serving Size: One 1/8th slice of the total quiche makes one serving.
