MUSHROOM OMELET

Ingredients
8 egg whites 3/4 cup mushrooms, sliced 3 oz. Low-fat cheddar cheese, shredded Salt and pepper to taste
Directions
In a small bowl, lightly beat the egg whites with a fork and season to taste with salt and pepper. Coat a small nonstick sauté pan with cooking spray and place over medium heat. Add vegetables if u need and cook until tender(optional). Add egg mixture,mushrooms and cook until set on the bottom. Sprinkle the cheese over top, fold omelet in half, and cook a bit longer until cheese is melted and eggs are set.
