Eggplant and Zucchini - Saute with curry!

Ingredients
1 Red Onion 1 Bell Pepper3 Garlic cloves1 Eggplant (500 gr)2 Zucchinis (300 gr)1 TomatoCilantro1 tbsp. Jamaican Curry1 tbsp. Tomato paste (optional)
Directions
Diced all veggies.
Sauté the onion, garlic and pepper in a large skillet for about 3 min.
Add the Eggplant and toss. Sauté for another 5 min.
Add zucchinis to the skillet. Continue to toss until desire softness...
Add diced tomato and cilantro...
In a separate bowl, mix the tomato paste and curry together. Add to the veggies and mix well. Saute for another 3 min.
