Green Chili 'Gravy'

3 T Olive Oil4 green chilies (about 4 oz)4 oz Pork - or other white meat -4 cloves of garlic, crushed and chopped1/4 cup chopped onion3 cups of low sodium chicken broth1 tsp cumin1T corn starch
If the meat isn't ground, then cube it into little tiny squares.
Chop onion,garlic and chilies.
Place olive oil in pan and brown the meat. Add the onions and garlic, cook until translucent.
Add the broth, the chilies and the cumin. Salt and pepper to taste.
Combine the corn starch with a little water. Mix and add to the pot.
Simmer the mixture until it reduces to about 2 cups.
Serving Size: Makes 8 1/4 cup servings
