AVK Pineapple upside-down cake

Topping:6 T vegan margarine1 C brown sugar1/2 t ginger1/4 t allspicePlace in pan: 8 slices pineapple8 Maraschino cherriesCake mix: 2 T flax seed.33 C of hot water.33 C Applesauce1.5 C vegan milk1 t vanilla3 cup white flour1 C sugar1/2 t salt1/2 t Cinnamon4 1/2 t baking powder
Preheat oven to 375
1) Mix the brown sugar, margarine, ginger and allspice in sauce pan. Let melt.
2) Spray cake pan with cooking spray.
3) Mix Flax seed and warm water
4) Line the bottom of the cake pan with pineapples and place cherries in center
4) mix the cake mix ingredients together
5) pour the topping mix on top of the pineapples and cherries.
6) pour cake batter over the pineapple and cherries sugar mixture
7) Bake at 375 for 35 minutes
Let cool for a few minutes and invert on plate.
