Papi's REAL Chicken Nuggets

Ingredients
16 oz chicken thigh meat; no bones, no skin1/2 onion, red 1 clove garlic, peeled3/4 tsp sea salt3/5 tsp coarse black pepper1 tbs nutritional yeast, Vegetarian Support Formula
Directions
In a food processor, process onion and garlic until coarsely chopped. Add boneless, skinless thigh meat and other dry ingredients.

Pulse until finely chopped and uniform in texture. Here's where I use a #50 portion control scoop to make these come out to +/- 3/4 ounce. Flatten each ball slightly onto a parchment-lined baking sheet. Put the sheet into the oven at 350 degrees for 17 minutes, or until the nuggets temp out at 165 for AT LEAST fifteen seconds.
